Ingredients

2long grain rice: 75g/10oz

Spring onions: 1 bunch , finely sliced

Green pepper: 1 , seeded and finely diced

Yellow pepper: 1 , seeded and finely diced

Tomatoes: 225g/8oz , peeled, seeded and chopped

Fresh chopped coriander: 30ml/2 tbsp
For the dressing

Mixed sunflower 75ml/5 tbsp and olive oil

Rice vinegar: 15 ml/1 tbsp

Dijon mustard: 5ml/1 tsp

Salt and ground black pepper
Instructions

Cook the rice for 10-12 minutes until tender but still slightly firm. Do not overcook. Drain and rinse with cold water.

Allow the rice to cool completely and then place in a large serving bowl. Add the spring onions, peppers, tomatoes and coriander.

Make the dressing by putting all the ingredients in a jar with a tight fitting lid and shaking vigorously until well blended. Stir the dressing into the rice and adjust the seasoning.

Cover and chill for about 1 hour before serving.
