Crab Cakes with Remoulade Sauce
I never met a crab cake that I didn’t like and this one is a real winner. Classic Remoulade sauce on the side makes you feel like you are in the “Big Easy!”
Ingredients: (For the Crab Cakes)
- 1 lb. lump crab meat picked over and shells removed.
- 1 and ½ cups quinoa cooked and cooled.
- ¼ cup finely chopped bell pepper.
- ¼ cup finely diced sweet onion.
- juice of 1 lemon
- 1 tbsp. creole mustard
- 2 tbsp. olive oil cup mayonnaise
- 1 egg beaten.
Directions:
- Mix all ingredients in a large bowl.
- Shape into 12 cakes and place on a greased baking sheet.
- Place the crab cakes in the refrigerator for 2 hours.
- Place the crab cakes in a 400-degree oven for 15 minutes.
- Serve with Remoulade Sauce.
Ingredients (For the Remoulade Sauce)
- 1/4 cup olive oil mayonnaise
- 1/4 cup light sour cream
- 1 tbsp. garlic minced.
- ½ cup chopped scallions.
- 2 tbsp. Creole mustard
- 1 tbsp. lemon zest
- 1 tsp. lemon juice
Direction:
Combine all ingredients together and serve.

Lemon Blueberry Muffins
Blueberry muffins are always a hit. I love to make a double batch and freeze half to have on hand for a busy weekday morning.
Serves: 12
Ingredients
- 2 cups almond flour
- ½ tsp. baking soda
- 1 tsp. fine sea salt
- zest of 2 lemons
- 3 eggs
- ½ cup honey
- 2 tbsp. lemon juice
- 2 tbsp. coconut sugar
- 1 tsp. vanilla
- 1 cup fresh blueberries
Directions
- In a large bowl, mix dry ingredients together except for the coconut sugar.
- Add the wet ingredients to the dry and mix well.
- Pour into lined muffin tins and bake at 350 degrees for about 20 minutes.
