Ingredients
- Olive oil 1 teaspoon
- Onion 1, finely chopped
- Arborio rice 300 g (10 oz)
- Vegetable Stock 1.2 litres (2 pints)
- Rocket leaves 50 g (2 oz)
- Salt and pepper
Instructions
- Heat the oil in a nonstick frying pan, add the onion and fry for a few minutes until softened. Pour in the rice and stir well to coat the grains.
- With the pan set over a medium heat, gradually add a little vegetable stock. Stir continuously while the stock is absorbed into the rice. Keep on adding the stock a little at a time - this will take about 20 minutes.
- Stir in the rocket, reserving 4 leaves for garnish, and cook just until the leaves start to wilt. Season to taste and serve each portion garnished with a rocket leaf.
