Ingredients
- 2 cup old-fashioned oats
- 1 cup flour (preferably wheat pastry flour)
- ¾ cup ground flaxseed
- ¼ tsp. salt
- ½ tsp. cinnamon
- 2 tsp. baking powder
- ½ cup mini chocolate chips
- 2 tsp. vanilla extract
- 1 cup pure maple syrup
- ½ cup natural almond or peanut butter
Instructions
- Preheat oven to 350° F. Combine all dry ingredients in a large bowl.
- In another bowl, mix the wet ingredients (vanilla extract, maple syrup and nut butter). Add wet ingredients to dry ingredients.
- Stir to combine.
- On a greased and lined (parchment paper) baking sheet, drop the dough into 24 even mounds. Lightly press down to flatten. Bake for 12-15 minutes or until cookies are firm in the center.
