Ingredients

1 carrot

1 courgette

4 eggs, beaten

60ml/4tbsp skimmed milk

15ml/ 1tbsp olive oil

30ml/2 tbsp grated reduced-fat Cheddar cheese (optional) salt and freshly ground black pepper
Instructions

Grate the carrot and courgette. In a clean bowl, whisk together the eggs, milk and seasoning.

Preheat the grill. Heat the olive oil in a small non stick frying pan. Add the grated carrot and couragette, and cook the vegetables over a medium heat, stirring occasionally, for 2-3 minutes.

Pour in the egg mixture, then sprinkle over the cheese, if using, and cook for 4 minutes or until the base is just set. Transfer to the grill and cook for a further 4 minutes or until just firm to the touch.
