According to a report from researchers at the Institute of Medicine and Canadian scientists we should be more concerned about our sodium and potassium intake. Total water intake at the reference level of 2.7 liters for adult women per day covers the expected needs of healthy, sedentary people in temperate climates.

Putting First Things First

Stephen Covey, in his inspiring and life changing book “the 7 habits of highly effective people” asks the question: “what one thing could you do (you are not doing now) that if you did on a regular basis, would make a tremendous positive difference in your personal life?”

He called this habit “putting first things first.” I like that name because often we do not put first things first. We put things which matter most at the mercy of things which matter least.

We subordinate our dreams for our jobs, our bosses, our friends, our parents and a whole lot of other people and activities. We should instead place our hopes and dreams as the most important thing everyday.

If you have not done anything today to get you closer to your dreams you are not a dreamer, you are a wisher. Wake up and do something about it or watch the dreamers take hold of their dreams, one little step each day.

Healthy Recipe

     

Chilled Roasted Tomato Soup

Makes: 4 servings, Serving size: 1½ cups

Nutritional Information:
Per serving:

Calories: 126cal, Protein:5 g, Fat: 6 g, Fiber: 4 g, Sodium: 53 mg .

Ingredients:

  • 1 1/2 Tbsp. olive oil
    3 lbs plum tomatoes, halved

  • 8 cloves garlic

  • 2 cups low-sodium organic chicken stock (a little more stock may be added, depending on how thick you want the soup)

  • 1/4 cup chopped fresh basil

  • 2-3 Tbsp. fresh rosemary

  • 1/2 Tbsp. balsamic vinegar

  • Salt and freshly ground pepper to taste

  • Reduced fat sour cream to garnish

  • 4 sprigs parsley to garnish


Directions:

  • Preheat oven to 375 degrees.

  • Rub a little oil on surface of a baking dish. Toss tomatoes and garlic cloves with remaining oil in bowl. Place tomato halves and garlic on baking dish. Roast for about 1 hour. (A little charring is tasty but don't burn the tomatoes or garlic.)

  • Remove from oven. Snip off garlic clove ends. Hand squeeze (be careful, they are hot!) or use the blade of a butter knife to squeeze out softened garlic from the skins into a blender or food processor.

  • Add tomatoes to processor, scraping the bits to capture all the flavor. Add stock, basil, rosemary and vinegar. Season with salt and pepper.

  • Blend until smooth. Let cool and place in refrigerator to chill. Divide among 4 bowls, garnish with a dollop of sour cream and parsley and serve.
