It is all too easy to accept the limits placed on you by other people or by
random circumstances. Easy, yes, but where does that get you? Do you want your
vision to be eroded by the small-mindedness of those around you? What is your
purpose, anyway -- to just get along, or to make a real difference?
Respect the opinions of others, to be sure. There is much you can learn from
them. Let them challenge you, support you and push you forward. Don't let them
limit you. You are your own person. Only you know what you are capable of
achieving. No one else has the ability to limit that, unless you let them. Sure,
the negative comments and criticism can sting. Yet you must learn from them and
move forward.
You are truly blessed with a magnificent, powerful, unique life. There are so
many places you can go, so many wonderful things you can do. In all of history,
there has never been anyone who can equal you.
Keep your vision strong. Set your own limits. Set your own standards, and set
them high. This is your life we're talking about. It's worth every effort you
can give to it.

Pepper Baked Potatoes with Chicken
Makes: 8 servings
Ingredients:
-
4 potatoes,
scrubbed
-
2 teaspoons
non/lowfat margarine
-
3/4 pounds
boneless skinless chicken breasts, cut into one inch pieces
-
1 green
pepper, cut into strips
-
1 onion,
wedged
-
1 teaspoon
basil
-
8 ounce can
cream of chicken soup (99% fat-free)
-
1/4 cup water
Directions:
-
Scrub potatoes
and bake at 400 degrees F for 60 minutes.

In a nonstick
skillet, melt margarine over medium heat and saute chicken until browned.
Set chicken aside.

Saute pepper,
onion and basil in the same skillet for 3-4 minutes

Add soup and
water and bring to a boil. Add chicken, reduce heat to low and simmer for 5
minutes.

Split open
potatoes and top with mixture.

10 Tips to Beat the Summer Heat
No matter where you live, the energy crunch will affect
you all over the summer. The most important thing to
remember is to listen to your body!
1. Schedule physically strenuous activities for
cooler times. And yes, that includes walking around
the theme parks. Walking around in the heat and humidity
can make ALL parts of your body sweat, and that includes
your poor feet. When feet are wet, blisters can develop,
so try to wear socks that are not 100 percent cotton. If
you feel a hot spot developing, find a place in the
shade to sit down. Take off your shoe and sock and
inspect your feet. Put a bandage on the tender area, and
let your feet dry. Dry feet are happy feet!
2. Dress in light, loose, cotton clothing.
Natural fabrics like cotton are much cooler than most
synthetics (though there are new high-tech synthetics
made specifically to keep you cool). Protective hats
(Wide-brimmed) keep the sun out of your eyes and provide
some cooling shade. Loose fitting clothes allow air to
circulate, keeping you cooler. The fewer clothes, the
better, but make sure to be appropriate to the
circumstances.
3. Use sunscreen of SPF 15 or higher (the most
effective products say "broad spectrum" or "UVA/UVB
protection" on their labels). You can get painful
sunburn even on a cloudy day, so slather on the
sunscreen every morning before you start out. Don't
forget lips, ears, back of neck.
