Pesto Risotto
Makes: 4 servings, about 1/2 cup per serving.
Ingredients:
2 cups basil leaves, lightly packed
1/2 cup mint leaves, lightly packed
1 medium garlic clove, chopped
Zest of 1/4 lemon, chopped
1/4-1/2 tsp. salt, or to taste
1 1/2 Tbsp. pine nuts or blanched almonds
1 tsp. fresh lemon juice 2 Tbsp. extra virgin olive oil, divided
1/2 cup shallots thinly sliced
1 cup Arborio rice
4 cups hot reduced sodium chicken broth
Salt and freshly ground pepper
Grated Parmegiano-Reggiano cheese (optional)
Direction:
In a food processor or blender, finely chop the basil, mint, garlic and lemon
zest. Add the salt and nuts, and pulse until the nuts are chopped. With motor
running, drizzle in the juice, then 1 tablespoon of oil, to form a smooth purée.
Season the pesto to taste with pepper and set it aside. (Pesto can be made ahead
of time and refrigerated in a tightly closed container.)
Heat the remaining 1 Tbsp. of oil in a large, heavy saucepan over medium-high
heat. Sauté the shallots until they are soft, about 2 minutes. Add the rice,
stirring, until the grains glisten and are opaque white, about 1 minute.
Slowly stir in 1 cup of hot broth. As soon as it is absorbed, add more broth,
1/2 cup at a time, stirring constantly to get a creamy texture. Reduce the heat
to medium. When the rice is “al dente” (cooked but still offering slight
resistance when chewed), then the risotto is done (this takes about 20 minutes).
It should be thick and creamy. Season it to taste with salt and pepper.
Transfer the risotto into a medium bowl and stir in the pesto. Top each serving
with grated cheese, if desired. Serve immediately.
