WOOD APPLE JUICE

(A seasonal delicacy; wood apple sherbet with a hint of lime)


Ingredients

  • 4 ripe wood apples
  • 100 g jaggery
  • juice of 2 limes

  • 200 g sugar or as required

  • 1.2 liters water a few sprigs mint leaves, chopped

Directions

  • Neatly cut the wood apples open from the top.
  • Scoop out the pulp, mash it with jaggery and lime juice to a smooth paste.
  • Mix sugar, water and chopped mint with the mashed fruit pulp.
  • Strain the syrup. Mix well.
  • Chill and serve in the wood apple shells or in glasses.
