Green Beans with Tomatoes

 

 

 

This is a real summer favourite using the best ripe plum tomatoes and French beans.


Serves: 4

 

Ingredients

  • 30ml/2 tbsp olive oil

  • 1 large onion, finely sliced

  • 2 garlic cloves, finely chopped

  • 6 large ripe plum tomatoes, peeled, seeded and coarsely chopped

  • 150ml/ ¼ pint/2/3cup vegetable stock

  • 450g/1lb French green beans, sliced in half lengthways

  • 16 pitted black olives

  • 10ml/2 tsp lemon juice

  • salt and ground black pepper

Direction:

  1. Heat the oil in a large frying pan. Add the onion and garlic and cook for about 5 minutes until softened.

  2. Add the chopped tomatoes, stock, beans, olives and lemon juice and cook over a gentle heat for a further 20 minutes, stirring from time to time, until the sauce is thickened and the beans are tender. Season with salt and pepper to taste and serve at once.
