This is a real summer
favourite using the best ripe plum tomatoes and French beans.

Ingredients

30ml/2 tbsp olive oil

large onion, finely sliced

garlic cloves, finely chopped

large ripe plum tomatoes, peeled, seeded and
coarsely chopped

150ml/ � pint/2/3cup vegetable stock

450g/1lb French green beans, sliced in half
lengthways

pitted black olives

10ml/2 tsp lemon juice

salt and ground black pepper
Direction:

Heat the oil in a large frying pan. Add the
onion and garlic and cook for about 5 minutes
until softened.

Add the chopped tomatoes, stock, beans, olives
and lemon juice and cook over a gentle heat for
a further 20 minutes, stirring from time to
time, until the sauce is thickened and the beans
are tender. Season with salt and pepper to taste
and serve at once.
