Ingredients

350g/12oz/3 cups medium cooked prawns

350g/12oz/3 cups scallops, removed from their
shells, with corals intact if possible

175g/6oz tomatoes, diced

1 mango, weighing about 175g/6oz, diced

1 red onion, finely chopped

350/12oz salmon fillet

1 fresh red chilli

Juice of 8 limes
-
30ml/2tbsp sugar

2 pink grapefruits

3 oranges
-
4 limes

Salt and freshly ground black pepper
Directions

Cut the
salmon into small pieces. Dice the chilli, and mix with the fish, tomato and
mango. Add the lime juice, sugar and seasoning. Stir and leave to marinate for
3 hours.
