Frittata
is the Italian version of an omelette. The filling ingredients are
set in the eggs as they cook, rather than being served in the middle
of a folded omelette. If you want something a little special, try a
combination of smoked salmon and asparagus tips, for a wonderful,
rich flavour.

Grate the carrot and
courgette. In a clean bowl, whisk together
the eggs, milk and seasoning.

Preheat the grill. Heat the
olive oil in a small non stick frying pan. Add the grated carrot and
couragette, and cook the vegetables over a medium heat, stirring occasionally,
for 2-3 minutes.

Pour in the egg mixt ure,
then sprinkle over the cheese, if using, and cook for 4 minutes or until the
base is just set. Transfer to the grill and cook for a further 4 minutes or
until just firm to the touch.
