Carrot and Courgette Frittata

 

 

 

Frittata is the Italian version of an omelette. The filling ingredients are set in the eggs as they cook, rather than being served in the middle of a folded omelette. If you want something a little special, try a combination of smoked salmon and asparagus tips, for a wonderful, rich flavour.

Ingredients

  • 1 carrot

  • 1 courgette

  • 4 eggs, beaten

  • 60ml/4tbsp skimmed milk

  • 15ml/ 1tbsp olive oil

  • 30ml/2 tbsp grated reduced-fat Cheddar cheese (optional) salt and freshly ground black pepper

    Directions

  • Grate the carrot and courgette. In a clean bowl, whisk together the eggs, milk and seasoning.

  • Preheat the grill. Heat the olive oil in a small non stick frying pan. Add the grated carrot and couragette, and cook the vegetables over a medium heat, stirring occasionally, for 2-3 minutes.

  • Pour in the egg mixture, then sprinkle over the cheese, if using, and cook for 4 minutes or until the base is just set. Transfer to the grill and cook for a further 4 minutes or until just firm to the touch.
